All About Me

Hi! I am Stacy – a lover of travel, parties, food and planning. Yes, I love making lists and find it helps me in all areas of my life. And to me, planning is half the fun of all adventures – especially travel. That’s why I decided to create this website – to share my lists, tips and tricks. 

I am a scientist by nature, very curious and love anything new. I spent much of the early part of my career in biotech, working on pulmonary immunology research. I sort of fell into that career after college and, while I found it interesting, I am a people person and did not want to continue to just work with Petri dishes and tubes. I LOVE animals, so I considered veterinary school for a bit. Eventually I landed on nutrition – it combines my love of science, psychology and food. I have a master’s degree in community nutrition and my Ph.D. in nutritional science. I am also a Registered Dietitian. I currently work in public health in maternal and child nutrition, which I find very rewarding.

While I love the science behind food and, of course, eating and trying new foods, I am not a lover of cooking. Yes, I can make basic dishes, but nothing fancy. I do love to eat, however I do not like to cook. Lucky for me, I married the most amazing man who is a self-trained fantastic chef (no not a cook… he is gourmet in his dishes and can just whip together amazing things without recipes, something I could never imagine being able to do)! So he does the food in our house and I stick to desserts. Yes, I love to bake! Heck yeah I can follow (and even play with) a recipe/protocol. 

My husband and I live in Denver, Colorado with our two amazing young daughters, two goofy Labrador retrievers and a pet rat (yes, we love our rats in this family). We like to spend as much as time as we can outdoors, exploring and trying new things. Our favorite activities are camping, fly fishing, hiking, biking, swimming, yoga, art, music and any sort of adventure, big or small. We are trying to instill in our daughters our love of travel and adventure by taking them to new places, learning about and respecting new cultures, tasting new foods (we have a try at least one bite rule), and caring for our world through kindness.
